Cast-iron drum · 40-minute roast We roast in small batches on a cast-iron drum that takes forty minutes where most machines take twelve. Slower heat means more time in development — the sugars caramelize rather than char.
What you taste is the bean, not the roast. We call that getting out of the way.

Pour twice the coffee weight in water at 93°C. Wait thirty seconds. The CO₂ releasing tells you the beans are fresh.
