We visit each partner farm once a year. We cup every lot before it ships. If it doesn't clear our threshold, it doesn't carry our name.

Slow roast.
Nothing added.

We roast in small batches on a cast-iron drum that takes forty minutes where most machines take twelve. Slower heat means more time in development — the sugars caramelize rather than char.

What you taste is the bean, not the roast. We call that getting out of the way.

Grind fresh

Grind only what you need, within sixty seconds of brewing. Stale ground coffee is the number-one variable you can control.

Bloom first

Pour twice the coffee weight in water at 93°C. Wait thirty seconds. The CO₂ releasing tells you the beans are fresh.

Slow pour-over — steady circles, even extraction

Pour slow

Add the remaining water in steady circles, never rushing, over the next two minutes. Even extraction is even flavor.
